Adding more raw food into your diet is an excellent way to keep your kitchen and your body cool as the weather heats up. Cucumbers and mint are exceptionally cooling to the body and tossed up with lemon and dill, they’re very tasty, too. Enjoy this quick and easy recipe as a light lunch or first course.
- 3 medium cucumbers (about 4 cups cucumber slices)
- 1/2 cup chopped dill
- 1/2 cup chopped scallions
- 1/4 cup lemon juice
- 1 tablespoon dried mint or 3 tablespoons fresh chopped mint
- 3/4 teaspoon salt
Slice your cucumbers into very thin rounds either by hand or using a mandoline. Toss with all remaining ingredients in a large bowl. Place in the refrigerator to chill until ready to serve.
